Bread Pot Chocolate Cake, Ala Bush Chef

Zandre Sunway Zimbabwe small 1Zandre having returned from a MZe20 Zimbabwe, Zambia and Malawi expedition trip had a wonderful experience and has the following recipe for you to try out at home.

I’ve always enjoyed a challenge and I try something new on every tour I do. Even if I don’t have too much of a sweet tooth I decided on a chocolate cake. This is a definite winner and could earn you those extra “brownie” points on any camping trip anywhere in the world. It had been a last minute decision so I was briefly prepared and did not have an icing or caramel sauce to cover. But it came out perfect none the less.

What you need:
• 2 ½ - 3 cups flour
• 1½ cups sugar(Adjust to how sweet)
• ½ - 1 cup cocoa powder(I only had +- ½ cup)
• 1/4 teaspoon salt
• +-1 tablespoon vanilla extract
• ½ cup oil
• 2 cups cold water

All of the measurements where adjusted by eye and the whole idea is to be able to make it upon guessing the amount of ingredients. It makes life less complicated and ensures many smiles to those watching.
Mix the flour, sugar, cocoa and salt. Mix the vanilla, oil and cold water.
Mix the wet and dry ingredients together well. The mixture will be sticky and wet, but that’s perfect! Oil your ‘Dutch oven’ bread pot and fill it with the batter.
Make a camp fire and place the pot onto some coals and on the top of the lid to keep heat in and create a little oven. Maintain a good amount of coals around and on top of the lid to keep it baking.
It had taken more than an hour due to wind but essentially it should take +-40-45 mins.
You can frost it with a simple icing made from icing sugar, cocoa and water. Or a caramel butter frosting.

Im sorry to say I did not take a picture of the end result.

Happy baking at your next home under the stars.
